ASADO A LA OLLA

El asado a la olla lo hago generalmente con un corte que en Chile se llama pollo ganso ,pueden hacerlo también con lo que llaman choclo o choclillo, en Perú se conoce como peceto y es una carne de corte alargado muy magra que pertenece a los cuartos traseros del vacuno, lo puedes acompañar con arroz condimentado, con una rica ensalada o un puré, a mi nieta le encanta en sandwich, según ella parece "jamoncito", en general lo hago con muy pocos condimentos y a pesar que me encanta la cocción muy lenta para las carnes, esta vez vamos a usar la olla de presión en apoyo a todas las personas que tienen que ingeniarselas para cocinar lo más rápido posible.


Ingredientes:

Pollo ganso, calculen que de 1 kilo salen como 8 tajadas
1 cebolla cortada en cuartos
1 zanahoria cortada en trozos
2 dientes de ajo enteros
1 y 1/2 taza de vino a elección

Preparación:

En la olla de presión pon un poco de aceite, dora el trozo de carne entero,que qude bien dorado por todos lados, ahí mismo agrega los demás ingredientes más 1 taza de agua, no le pongas sal todavía, cierra la olla de presión y déjala cocer por 15 minutos desde que empieza a sonar el pito característico pasado ese tiempo deja que salga el vapor, abre la olla, retira la carne poniéndola en una tabla mientras pon en la licuadora todo el jugo que quedó en la olla con las verduras, licúalo, vuelve a ponerlo en la olla, corta la carne en tajadas y vuelve a ponerla en la olla, condimenta con sal, vuelve a cerrar la olla de presión y cocina por otros 15 a 20 minutos desde que empieza a silvar....está lista, deja que salga el vapor, prueba la sal, si quieres pueden agregarle algún otro condimento de tu preferencia, en general esta carne me gusta así, solo con el sabor del vino y las verduras.....
Esta carne la puedes preparar, porcionar en film plástico y congelarla así la vas descongelándo conforme la necesites por ejemplo si tienes que llevar almuerzo a la oficina o mandarles a los niños al colegio ( es alimenticia y les encanta).
Si tienes tiempo y puedes darte el gusto de hacerlo en cocción lenta, este proceso se demora alrededor de dos horas.
